Step 1

Heat the oil in a large sauté pan over a medium heat and cook the chorizo until it just starts to ooze its oil. Add the minced beef. Stir-fry until the meat starts to brown, breaking up any lumps with a wooden spoon. Add the onion, green pepper and chilli and continue to cook for another 5 minutes or so until the vegetables are beginning to soften.

Step 2

When the vegetables are tender, stir in the tomato puree. Add the honey, mustard, vinegar and sugar and stir until well combined. Add the kidney beans, season to taste and then bring to a simmer and cook for another 2-3 minutes until the sauce is nice and thick.

Step 3

Heat a large non-stick frying pan and heat each wrap for about 10 seconds on each side. Arrange the lettuce down the middle of each wrap and then spoon over the Sloppy Joe mixture. Scatter the grated cheese on top with the Jalapeño chillies, if using. Fold in the ends, then roll up to enclose the filling. Cut in half, arrange on plates and let everyone tuck in!
